Soniya Bansal Shares Quick Summer Hauch Pauch with Paan Gulkand Drink

From Maki ki Roti, Sarson ka Saag, Dal Makhni to pasta, pizza and other cuisines, she is expert in all. Soniya Bansal, rooted from Punjab, does believe that life is all about eating good food. A single mother of three children has immense love for cooking and great taste in her hands.

If ever you are her guest for a meal, do not complain gaining a couple of kilos because of over eating. JWB presents some of her favorite summer recipes, which comes with an extra twist.

For Hauch Pauch:

INGREDIENTS:

  1. Wheat dough
  2. Gram Flour
  3. Ketchup
  4. zero no. sev
  5. 2 chopped onions
  6. 2 chopped tomatoes
  7. 1 chopped cucumber
  8. chopped paneer chunks
  9. coriander leaves
  10. Salt to taste
  11. Red chili powder
  12. Dry coriander powder

Method for Hauch Pauch:

  • Make chapati using the wheat dough.

  • Make the batter of gram flour and put dry coriander powder, red cilli powder and salt (according to taste).

  • Stir it well.

  •  Heat a heavy frying pan, tawa, or griddle on medium heat and cook chapati on one side.
  • Spread the gram flour batter on half cooked chapatti and cook it properly.

  • Once the chapatti is cooked from one side flip it and cook it from other side.

  • Put few drops of oil after the chapatti is properly cooked for crispiness.

  • Divide the chapatti into four parts using a pizza cutter.

  • Spread ketchup equally on the chapatti.
  • Add sev over it.
  • For toppings: Put chopped onion, tomatoes cucumber, paneer.
  • Garnish it with coriander.

Serve it in a plate with some ketchup on the side.

For Pan Gulkand Drink:

INGREDIENTS (measuring cup used, 1 cup = 250 ml)

Paan

  1. 2 Paan (without catechu, choona and betel nut)
  2. 4 cups chilled milk or 3 cups of milk + 1 cup chilled water
  3. 1 tbsp rose syrup or rooh afza (optional)
  4. Vanilla ice cream
  5. Sugar (optional)
  6. 2 to 3 tbsp of chopped dry fruits – almonds, pistachios, cashews, dry figs etc (optional)

Method for Paan Gulkand Drink:

  1. In a small blender, puree paan with some water.
  2. In a bowl or jar, mix the paan puree and milk.
  3. Stir well.
  4. Now add vanilla ice cream with a little sugar (if required) and stir well again.
  5. Add drops of rose syrup or rooh afza.
  6. Add the chopped dry fruits.
  7. Mix well and serve the paan gulkand drink in glasses.
  8. Garnish the drink with fresh rose petals.
