Not Gajar Ka Halwa But Try This Fresh Carrot Cake That Will Keep You Warm This Winter!

Hello! I am back. Remember I had shared a recipe for Dried Apricot and Plum Jam, a few days ago? Well, here’s another one: a dessert that is my absolute, all-time favorite, and something perfect for winters.
Imagine the goodness of pine nuts, walnuts, raisins, cinnamon and carrots in a moist- gooey sponge. Yes, I am talking about a mouthful of classic Carrot Cake.
It’s the easiest recipe to attempt and believe me, it results into deliciousness that’s hard to keep your hands off.
Well, perhaps we can attribute its deliciousness to the best produce of carrots during winters. They are juicier, sweeter and have more substance that lends more flavor to the sponge. I also love ginger-peel. So, I add that to my sponge, too. In case, you are a nutmeg fan, don’t shy away from adding that, as well. That’s the beauty of this recipe; you can experiment with the addition of spices to your heart’s delight.
However, a word of caution. Avoid using Cashews or Pistachios in this cake. Pine nuts and Walnuts suit best for this recipe.
Now go bake this cake and enjoy that warm fuzzy comfort, as the nip in the air sets in.
And yeah, with some additional dollops of cream cheese on top, you may never want to share the cake with anyone.
Eggs | 2 no |
Breakfast Sugar | 50 grams |
Brown Sugar | 60 grams |
Vanilla essence | ½ tsp |
Flour | 125 grams |
Baking Powder | ¼ tsp |
Baking Soda | 1/8 tsp |
Ginger powder | 1 tsp |
Chopped Walnut | 25 grams |
Pine nuts/Raisins | 20 grams |
Grated Carrot | 100 grams |
Chopped Pineapple | 50 grams |
Oil | 125 ML |
METHOD
- Peel the carrots and grate them.
- Chop the pineapples and mix them with grated carrots.
- Sauté them in 25-30 grams butter.
- In a big bowl beat breakfast sugar, brown sugar and eggs together.
- Add vanilla essence, chopped walnuts, pine nuts and sautéed carrots and pineapples into the above-mentioned mix.
- Sift the flour.
- Add ginger powder, baking soda and baking powder into the flour.
- Mix both dry and wet ingredients together.
- Add oil into the batter and fold every ingredient well.
- Grease the mold and put the batter into the mold.
- Bake it at 130 degree Celsius for 30 minutes.
